Microbial collagenolytic enzymes are able to hydrolyze such a hard insoluble protein substrate as collagen. In this article are gathered data concerning the ability to degrade collagen amongst various groups of microorganisms, such as bacteria, fungi, actinomycetes and yeasts. The physical and chemical properties of collagenolytic enzyme preparations and methods of their separation and purification have been examined. The possible application ways of these enzymes in industry and medicine have been discussed.
